Gin is only half the equation that makes a classic martini. Vermouth is the other crucial ingredient, and it is finally starting to get its due thanks to the craft movement. Many craft vermouths are great for sipping straight, as well. I recently had the pleasure to sit down with Neil Kopplin, co-owner and national sales executive of Imbue Cellars, to discuss his views on all things vermouth.

“It isn’t a martini without vermouth; it’s just gin or vodka.”

“It isn’t a martini without vermouth; it’s just gin or vodka,” Kopplin explains. “A martini is a cocktail; it’s not a word that should be tossed around just because your drink is served up. This topic makes me a touch surly because I’ve got definite opinions about it. A martini is three parts gin, one part vermouth, with orange bitters and a twist. Yes, olives are a nice touch, too, because a true martini has the slightest touch of sweetness balanced with some salty olives; it can be heavenly. Each home bartender and drinker should experiment with different gins, vermouths, proportions, and garnishes to decide what they like best.”

In my discussions with American and British vermouth producers, it became clear that there exists a divide between the continents. So I ask Kopplin to explain the differences.
